The Dual Core 10″ Yanagiba Knife is, simply put, one of the finest sushi knives available. And it is perhaps the most special blade in Shun’s very special Dual Core line. The Dual Core 10″ Yanagiba is a very traditional, but highly specialized piece that glides through raw proteins in a smooth, graceful motion that leaves-cross cut surfaces absolutely clean and intact. And while it’s primary purpose is sushi production, it is equally effective on any boneless, raw or cooked meats.
The yanagiba begins with an extra-thick, 4.5 mm-wide blade stock of Shun’s amazing dual-core VG10 & VG2 steel composite. A single bevel is sharpened and honed by hand to an incredibly sharp 16 (comprehensive) edge. The thick spine provides great rigidity and some measure of heft that helps the user maintain a smooth, consistent motion. The blade includes a custom-made wooden saya (sheath) that will protect the Yanagiba when not in use. Ideal for professionals and home enthusiasts.
