Shun Kanso 7″ Hollow Ground Santoku Knife

The Shun Kanso 7″ Hollow Ground Santoku Knife has a classic Japanese profile with a simplistic, zen-inspired design that is spare, yet lacks nothing. The blade is forged from a high-performance formulation of Japanese AUS10A, high-carbon, vanadium stainless steel that extends to a visible, flat, full tang. The material has exceptional strength and hardness, so it can be ground thin and beveled, like all Shuns, to a wicked-sharp 16 per side.

The blade is also Hollow Ground for slicker performance and less food adhesion. Shun has applied a “heritage” finish that is unique to the Kanso line; it creates an understated, rustic look that will become increasingly beautiful with time and use. Finally, a simple and perfectly functional handle is fashioned from contoured tagayasan wood slats, secured by two rivets.

The Kanso 7″ Santoku is light, precise and fast; the perfect blade for a wide range of fruit, veg and light protein prep.
